In November 2019, Ibiza won the first Michelin star in the island’s history. Es Tragón, the award-winning establishment located in Sant Antoni, is led by chef Álvaro Sanz and his partner Antoni Gallart. The gastronomic recognition appeared after four seasons working to make this dream come true.
Es Tragón and its chef Álvaro Sanz (Madrid 1983) bet on haute cuisine. It is personal and creative, of Mediterranean roots and with incursions into Mexican cuisine, where respect for raw materials prevails. The restaurant opened in 2016 and is located on the road to Cala Gracioneta and Cap Negret. Its chef, Álvaro Sanz, trained with chefs such as Salvador Gallego, Santi Santamaría, Martín Berasategui or Joël Robuchon and directed the kitchen of the Arzak restaurant in Mexico before he arrived in Ibiza.
