Due to the arrival of renowned Michelin stars chefs and the opening of fine cuisine restaurants, Gastronomy has become one of the pillars of Ibiza’s tourist offer. Sergi Arola was the pioneer of this process, when he opened his tapas restaurant Vi Cool at the Hotel Aguas de Ibiza. Paco Roncero followed his example with Sublimotion, a restaurant at the Hard Rock Hotel Ibiza.
The brothers Albert and Ferran Adrià introduced, together with Guy Laliberté, creator of Cirque du Soleil, a new concept of show restaurant: the Heart, at the Ibiza Gran Hotel. In 2019, the island of Ibiza welcomed chef Martín Berasategui, who heads the kitchen of the Exteko, at the Bless Hotel Ibiza, as well as Omar Malpartida and his new Maymanta restaurant, in the Aguas de Ibiza of Santa Eulària, with a cuisine based on the Peruvian cooking. Also Nandu Jubany open this year the resraurant Pecador in Santa Eulalia.
Together they add more than 13 Michelin stars that make the island of Ibiza a gastronomic reference. Oscar Molina, chef of La Gaia restaurant, in the Ibiza Gran Hotel, is also a referent of the international gastronomy in the island with a four-handed gastronomic composition of flavours and textures. Molina, accompanied by the renowned chef Mario Sandoval and Roberto Ruiz, the only Mexican chef with a Michelin star in Europe has present his international four handed shows. In November 2019, Ibiza won the first Michelin star in the island’s history.
Es Tragón, the award-winning establishment located in Sant Antoni, is led by chef Álvaro Sanz and his partner Antoni Gallart. The gastronomic recognition appeared after four seasons working to make this dream come true. Es Tragón and its chef Álvaro Sanz (Madrid 1983) bet on haute cuisine. It is personal and creative, of Mediterranean roots and with incursions into Mexican cuisine, where respect for raw materials prevails.
The restaurant opened in 2016 and is located on the road to Cala Gracioneta and Cap Negret. Its chef, Álvaro Sanz, trained with chefs such as Santi Santamaría, Martín Berasategui or Joël Robuchon and directed the kitchen of the Arzak restaurant in Mexico before he arrived in Ibiza.
